How to make it:
In a bowl mix the eggs with the yogurt and add the oil. In another bowl mix the bicarbonate soda with the flour and then add them to the egg mixture. Use two sheets of filo pastry to make each roll. Brush the sheets with oil first and then sprinkle some of the egg mixture and feta cheese. Save some of the mixture to pour over the Banitza in the end. Roll the sprinkled sheets and place in a heavily oiled tin. After rolling all the sheets brush them with oil and pour with the rest of the mixture. Bake at 200 C until golden brown.
Banitza is a traditional Bulgarian dish which is made with filo pastry and different kind of stuffing. It may vary from salty to sweet. Different options are available like spinach and feta cheese or butternut squash and walnuts.
It’s usually made on special occasions like Christmas and New Year’s Eve. On New Year’s Eve, there is a tradition the Banitza to be made with lucky charms like for example Luck, Health, Prosperity and so on.
